I was so excited to share this recipe after making it because it received rave reviews from my family! The kids went back for seconds and continued to comment how much they liked the recipe. I loved how quick it all came together on a week night and when paired with juicy oranges and fresh peppers made for an easy and healthy meal.
Lime Chili Steak
Recipe adapted from Our Best Bites
1-2 lbs of boneless steak (flank steak works great)
Rub
1 tsp. chipolte chili powder (I like the smoky flavor of the chipolte style chili powder but you can use regular chili powder here instead)
2 tsp. garlic (I used the pre-chopped jarred fresh-style but you can use 1 tsp. of granulated garlic instead)
1/2 tsp. cumin
1/2 tsp. coriander
1/2 tsp. oregano
1/8 - 1/4 tsp. cayenne pepper
3/4 tsp. kosher salt
1/4 tsp. freshly ground black pepper
1-2 limes juiced (I used two because I love the flavor of lime, especially in cranberry juice)
1 Tab. extra virgin olive oil
Combine the rub spices in a small bowl then add the lime juice, garlic and oil and combine. Rub the steak rub in with your hands and allow the steak to sit for 15 minutes while you preheat your grill.
Cook over medium-high heat (unless you have a Traeger, then cook on the hottest setting) for 5-7 minutes per side. Let steak sit for at least 5 minutes prior to slicing against the grain into strips about 1/4 inch thick.
While my steak cooks, I make these super easy, delicious flour tortillas and this fresh pico de gallo to serve with the steak.
Fresh Pico de Gallo

3 medium Roma tomatoes (less juicy)
1 bunch green onions (you can substitute red or white onions here and use about 1/2 an onion)
1 jalapeno pepper (I scrape out the seeds - don't touch them- as they contain the majority of the heat and make the sauce go from a mild/medium to a hot sauce.)
Juice of 1 lime
1/2 cup of chopped cilantro
Kosher salt, to taste
Chop the tomatoes, onions and pepper. Mix with other ingredients and add salt, to taste. Refrigerate for 30 minutes if you have time. (I've been known to skip this step on many occasions.)
This makes about 1 1/2 cups.
Flour Tortillas

This recipe makes 8-10 medium tortillas and I always wish that I would have made more for leftovers!
2 1/2 cups flour
3/4 tsp. kosher salt
1/4 cup coconut oil (you can use shortening here but I try not to cook with it for healthier choices -it's actually good for you!)
3/4 cup to 1 cup hot water (hot tap water is fine)
Combine the flour and salt in a stand mixer. Add coconut oil or shortening and combine until crumbly. Slowly add 3/4 cup hot water until the dough starts to pull away from the bowl like a big ball of Play-Doh.
Heat a skillet over medium heat. Divide the dough into 8-10 balls and roll/press the balls as thin as possible into circles.

Cook on the hot skillet until bubbles appear for about 1 minute. Time this as close as possible to when you will be eating as these are best hot off the griddle.
