Smoked Salmon Fettucini Alfredo with a side of grilled zuchinni
Fettucini Alfredo has been one of my top favorite menu items for years. When I was younger, it was always a safe bet while eating out. My mom used to ask for requests for birthday meals and Fettucini Alfredo was always my top choice. Fast forward years later...healthier options had to start replacing the beloved alfredo but this recipe stands the test of time for being able to make a special occasion or weeknight meal elevate me to that "happy place" of rich and creamy sauce laden with butter fit for a queen.
My girls think this recipe is "to die for" and also request it for their special days.
In fact, now 14-year old Miss Mara entered this family recipe for a cookbook contest entry when she was 10 years old and it was published with this statement from her, "This is definitiely my favorite dinner ever," says Mara, "I hope your family loves it! It's easy to make and we usually have most of the ingredients available in our pantry and fridge. This is a great dinner with broccoli and with garlic breadsticks or sourdough bread."
My favorite version is sprinkled with smoked salmon. Heavenly!
Smoked Salmon Fettucini Alfredo
otherwise known as Miss Mara's Marvelous Fettucini Alfredo
Ingredients:
8 ounces fettuccini noodles
2 ounces cream cheese
1/2 cup butter
1 clove garlic, minced
1 cup half and half cream (or regular milk will work too but it will be a bit less creamy)
1 cup grated Parmesan cheese, freshly grated plus extra for serving
1/4 tsp. pepper
Smoked salmon, optional
Instructions:
1. Bring the noodles to a boil. Remove from heat and simmer for 15 minutes. Drain.
2. In a large saucepan, melt the cream cheese and butter. When melted add the garlic and cook 1 minute. Add half and half. Whisk and cook and stir over medium heat until smooth. Stir in Parmesan cheese and pepper. Toss with pasta and salmon, if using, and serve as soon as possible. Sprinkle with extra cheese.
Serves 4.
It may be rich and a bit high in fat, but it does come together for a quick weeknight dinner in a pinch!
