I am a child of the Brady Bunch era and will never forget the episode when Peter Brady inquired what was for dinner and began a household trend speaking with a Humphrey Bogart accent stating that "Pork Chops and Applesauce" would be the evening's dinner. Everytime I think of serving pork for dinner, I quickly ponder whether I have any applesauce to serve alongside thanks to that famous Brady Bunch episode. This Pear Sauce is similar to applesauce but much better and tastes even better when served with pork chops or in this case, Brown Sugar and Spiced Crusted Pork Tenderloin with Pear Lime Ginger Sauce - the perfect combination of fall flavors.
Pear Lime Ginger Sauce
Ingredients:
3 Pears (I use Bartlett or d'Anjou), quartered and cored
1/2 cup brown sugar
1 cup Sherry or Vermouth
1 Tab. fresh ginger or 2 tsp. dried ginger
Zest and juice of one lime
Two to three branches of fresh thyme, optional
Dash of salt, optional
Instructions:
Place ingredients in a saucepan and bring to a simmer. Cover and cook for at least one hour. Remove thyme stalk. Season with salt to taste. This sauce tastes perfect over pork tenderloin, especially the recipe here for Brown Sugar and Spiced Pork Tenderloin.
I could eat this pear sauce as a dessert, it's that good!
