This recipe comes to you with rave reviews from my family. Everyone loves it. The hubs, the kids, the dog, the cat...me. With a little advance prep work the night before this can actually end up being a quick weeknight dinner to throw together in less than a half an hour. It is a recipe I experiemented with and apparently hit it on the head on the first try. We love this with homemade foccacia, salad, pear sauce and as seen in the photo, apple cider. I am going out on a limb to say this is my favorite fall meal!
Brown Sugar and Spice Crusted Pork Tenderloin
Ingredients:
1 pound pork tenderloin
2 tsp. dried thyme
2 tsp. kosher salt
1 tsp. freshly grated pepper
1/2 tsp. smoked paprika (the smoky flavor really comes out thanks to this version of paprika)
1 tsp. cinnamon
1/2 cup brown sugar
Instructions:
Mix all the rub ingredients except the brown sugar and pork in a small bowl. Cover your pork tenderloin with the rub on all sides and let sit for two hours (or overnight) refrigerated. When ready to grill or bake, rub the brown sugar to coat on all sides. Sprinkle it as best you can. Let it sit while the grill or oven preheats to 425 degrees. Roast for 15 minutes or until 140 degrees shows on a thermometer. Let pork sit for a few minutes as it will continue to cook. Cut into slices and serve with this amazing pear sauce.
