I have never liked beets. These beets changed any preconceived notions I had about beets and made me a beet-lover! Seriously! Now, if you only tried the beets that came out of the can, you have never really "tried" beets and you must cut them some slack. I was right there with you, and feeling like my life would go on without beets. I ate the beets my grandma served to be polite...and because they were good for me, but not because I liked them.
But now I have a recipe that makes me LOVE beets! I crave this recipe! I even ventured so far as to serve them as an appetizer to friends this weekend and they LOVED them too! The friends, also being polite, were skeptical, but could not believe how tasty beets could be after a good roast in the oven. Please try these as you will be otherwise missing out on the sweet goodness that we've discovered in this recipe.
Roasted Beets with Rosemary Gorgonzola Spread
1 cup cream cheese (1 package)
1/4 cup gorgonzola or blue cheese
1 Tab. fresh rosemary
olive oil to brush on beet

Salt and Pepper, to taste

Using a mandoline or very sharp knife, cut beets into 1/8 inch discs and either brush (or toss) with olive oil. Place on parchment or sheet pan (I like to use a Silpat.) and bake at 300 degrees for 45 minutes or until crisp.

Meanwhile, mix cream cheese, gorgonzola and rosemary in mixer or food processor until light and fluffy. Season with salt and pepper. Refrigerate until serving.

Spoon the cream cheese mixture over the beets evenly (or you could pipe the mixture, frosting-style).

I always end up roasting more than one beet as there is always a need for extra beets for the dip! These are so divine! I can't wait to hear what you think.
