Ingredients:
20-oz. package of brownie mix OR
(you can use the homemade mix recipe below)
16-oz. jar maraschino cherries, drained, 1/2 cup of juice reserved
6-oz. package semi-sweet chocolate chips
1/2 cup sweetened condensed milk (such as Eagle Brand)
Instructions:
Prepare brownie mix according to package directions,
using 1/4 cup cherry juice
(plus water if needed to equal amount called for in package directions).
If using homemade recipe below, add it to the batter, using one less egg.
Place paper liners in mini muffin cups.
Fill about 1/2 full with brownie batter.
Push a cherry into each cup (it doesn't have to be completely covered).
Bake at 350 degrees for 15-20 minutes.
Remove from muffin cups and let cool.
For ganache: Combine chocolate chips and condensed milk in a small pan.
Stir over low heat until melted.
Remove from heat.
Stir in remaining 1/2 cup cherry juice as needed for frosting consistency.
Place a dollop of warm frosting on each cherry cup.
A variation is to dip the tops of the brownies into the ganache.
Let cool.
Makes 3 dozen brownie cups.
For homemade brownie mix:
1 -12 oz. bag of semi-sweet chocolate chips
1 cup (2 cubes) buttter
1 1/2 cups sugar
1/2 teaspoon salt
4 large eggs at room temperature
1 1/2 cups flour.
Melt butter and chocolate chips over low heat.
Remove from heat, blending in sugar and then eggs, one at a time.
Add flour and salt.
