These tender, cheesy morsels with the bite of olive inside are probably my favorite appetizer recipe of all time. They stand the test of time and make a splash at every party they grace. I can't think of a holiday party without my mom's Olive Cheese Balls making an appearance. Imagine a hot, doughy cheez-it wrapped around a green olive and you have the perfection of this famed appetizer.
My Mom's Olive Cheese Balls
Ingredients:
1 cup (4 oz.) shredded Cheddar cheese
3 Tab. butter, softened
1/2 cup flour
Dash of salt
24 green pimento stuffed olives
Instructions:
Mix first four ingredients well. Mold a slightly rounded teaspoonful of dough around each olive, covering olive completely. Shape into round ball. Place on greased cookie sheet. Bake at 400 degrees for 12 minutes or until golden brown. Serve fresh out of the oven. Dough may be made ahead and refrigerated up to three days.
