This makes a great quick yet healthy meal and utilizes pantry staples that I always keep on hand (cans of black beans, chicken broth, onions and limes). This is a lunch favorite for me!
Super Quick and Easy Black Beans
Adapted slightly from Our Best Bites
Ingredients:
2 Cans Black Beans, drained and rinsed
1/2 Tablespoon olive oil
1 onion, diced
2-3 garlic cloves, pressed or finely minced
2/3 C chicken broth (or water, I use broth for extra flavor)
1/4 teaspoon cumin
1/4 teaspoon coriander
1/4 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1 lime, zested and juiced
Optional toppings include: grated cheese, cilantro, lime zest, sour cream or plain Greek yogurt, green onions
Instructions:
1. In a saucepan on the stove, heat the olive oil to med-high heat. Saute onions
for about 3 minutes or until they just start to become translucent. Add garlic
and saute abut 30 seconds more.
2. Add beans, broth, and remaining seasonings and bring to a boil. Reduce heat to a low simmer and simmer for about 7 minutes, stirring occasionally.
3. When they are done cooking, remove from heat and add in
a few squeezes of lime juice. Then smash some of the beans to thicken the sauce. I like mine on the thicker
side so I smash quite a bit. They will thicken more upon standing.
If you want a more soupy consistency, just add a little more broth.
Serve as a side dish, or wrapped in homemade tortillas, on top of rice, in tacos or fajitas, or on top of chicken or steak. These are also good over tortilla chips served "nacho-style", sprinkled with cheese.

Lime-Cilantro Rice
Ingredients:
2 Tablespoons olive oil
4 cups long grain rice (plus 6 cups water)
1 bunch cilantro, finely chopped
2 limes, juiced and zested
2 teaspoons crushed garlic
Instructions:
Heat oil in a large skillet. Add rice, cilantro, and garlic. Saute 3-5 minutes,
stirring frequently. Add water and lime juice and bring to boil. Then reduce
heat and simmer until all the liquid is absorbed by the rice (about 20
minutes). Sprinkle with zest. You can also use a rice cooker if you have one.
Makes 6 1/3 cup servings.
