Growing up, these were a special treat that I requested often. My mom's original version did not include peanuts but it's fun to mix it up and make variations on original recipes. Although I don't make these often because we have a sweet girl with a peanut allergy, on the rare occasions when she is gone, I get to satisfy my craving for this childhood treat (and then devour them all before her return...hopefully with help in the consumption department)!
No-Bake O'HENRY's otherwise known as Chocolate Scotcharoos
Ingredients:
1/2 cup butter
1 cup Karo syrup (found with other syrups)
1 cup sugar
Optional - 1 cup peanuts, unsalted or salted, chopped or not chopped
1 cup peanut butter
8 cups Rice Krispies (crisp rice cereal)
6 ounces chocolate chips
6 ounces butterscotch chips
Instructions:
You can make this on the stovetop or in the microwave. I will provide directions for the microwave. Melt butter, Karo syrup and sugar in the microwave for 2 minutes. Add peanuts (if using) and
peanut butter to the Karo mixture. Microwave everything for 1 minute. Add Rice Krispies. Spread into a 9" x 13" pan.
Combine chocolate chips and butterscotch chips in a bowl and
microwave for 2 minutes. Stir until smooth. Spread over krispie mixture. You can cool in the refrigerator or at room temperature.
Remove and cut into 1-inch squares.
