One night I wanted to make a romantic dinner for the Hubs and stumbled upon this recipe in Ellie Krieger's The Food You Crave cookbook. Yes, her cookbook title explains my love for this recipe and I promise you, if you like crab and taste this healthy dish, you too will crave it!
The recipe comes together quickly and packs a huge punch in the "wow factor" category so it would be wonderful to serve to guests.
Crab Mango Salad in Crisp Wonton Cups
Recipe adapted from Ellie Kreiger's The Food You Crave
Ingredients:
For the Wonton Cups:
18 wonton wrappers
2 teaspoons olive or grapeseed oil
1/4 teaspoon salt
For the Dressing:
2 Tablespoons fresh lime juice and 1 teaspoon of the lime's zest
1/4 teaspoon salt
1/8 teaspoon red pepper flakes
2 Tablespoons olive oil
For the Crab Salad:
1/2 pound lump crabmeat (without shells or cartilage)
1 stalk celery, finely diced
1/2 cup peeled and finely diced ripe mango
1/4 cup thinly sliced scallions (white and green parts)
2 Tablespoons chopped cilantro
Instructions:
1. Preheat the oven to 375 degrees F. Coat two mini muffin tins with cooking spray. (You can also use regular muffin pans as well.)
2. To make the wonton cups: brush both sides of the wrappers with the oil and place into a section of the muffin tin. Gently press and arrange to form into a cup shape. The wrapper will stick up out of the cup. Sprinkle with the salt and bake until brown and crisp about 8-10 minutes. Allow the cups to cool then remove from tin. (These can be stored a day ahead and stored at room temperature in an airtight container.)
3. To make the dressing: whisk together the lime juice, zest, salt, pepper and red pepper. Add olive oil and whisk until well combined.
4. To make the salad: in a medium bowl, toss together teh crabmeat, celery, mango, scallions and cilantro without breaking the crabmeat too much. Add the dressing and gently toss to combine. This can also be stored the day before and stored in the refrigerator.
5. Fill each cup and serve immediately.
Makes 16 mini muffin cups. Serves 6 as an appetizer.
*Don't swap out the lime for lemon and do not forget to add the fresh cilantro! These two ingredients are deal-breakers in my opinion.
