For this week's Menu Plan Monday, I needed to consider a few meatless options. One of Miss B's friends is staying with us this week and she happens to be a vegetarian. The girls are in a play production this week that entails many trips to and from the local high school for rehearsals and workshops.
When I pondered the meatless options that our family eats, to include dishes without eggs, it was limiting in scope. I checked out some of my favorite resources for kid-friendly meals, and again, turned up very few figure-friendly options but Cheese Fondue, Alfredo, Spanakopita, Calzones filled with Ricotta/Cheese Mixture and Gorgonzola and Onion Pie sure sounded good.
Here's what I settled upon for the week:
Monday
Mole Chicken Enchiladas (recipe to follow) and Bean Burritos/Quesadillas for the Vegetarians
Spanish Rice
Fresh Vegetables
Leftover Cherry and Fresh Strawberry Pie
Tuesday
Pizza Night - Cheese Pizza and Pesto Chicken and Tomato Pizzas for the non-vegetarians. (I really wanted to make a Black Bean Mexican Pizza but I'm thinking the kids might prefer plain, old cheese).
Fresh Fruit Salad
Fresh Peas and Carrots
Wednesday
Italian Tortellini Italian Salad with Fresh Mozzarella, Cherry Tomatoes, Peppers, Italian Seasonings, Balsamic Grapeseed Oil, Pesto (without nuts) and Salami (and without Salami for the vegetarians).
Watermelon
Thursday
Breakfast for Dinner (otherwise known as "Brinner")
Crepes with Strawberries (or Ham and Cheese Crepes for non-vegetarians)
