Oh. My. Goodness.
If you have ever tasted one of the Graze company's Flapjacks, you know why I am reacting the way I am. They are indescribable. I am not a huge fan of store-purchased granola bars so when my subscription of the delightful Graze snacks graced my desk, I was hesitant to sample the Flapjacks that looked like a traditional granola bar. However, my 15-year old offered to take a sample bite and the look on his face captured one of sheer delight. He also attempted to walk away with the remaining box contents...a true sign that he not only liked this Flapjack, but loved it!
As soon as the chewy oat bar with bits of real fruit hit my mouth, I understood the fascination with these tasty and somewhat healthy snacks! Bliss!
You may remember me mentioning in this post that I was determined to find a recipe that replicated the tasty goodness.
I scrambled around the Internet in hopes of finding a recipe and only turned up with recipes with European ingredients and all in need of United States conversion. So, I set it as a challenge for myself to replicate these delectable morsels of goodness.
Although this is not a true "copycat" recipe as it does not taste identical to the original, it still tastes incredible and has the same chewy sensation. No sooner had I finished the batch, stashed it hidden overnight from my resident wolves, but it was devoured lest for two slices that I begged for in order to post a photo here!
Flapjacks
Ingredients:
1/2 cup brown sugar
1/2 cup butter (1 stick), salted
1 1/2 cup oats (or quick cook oats)
2 tablespoons honey
1/2 cup dried fruit (dried cherries, dried blueberries, dried chopped apples, dried cranberries)
2 teaspoon cinnamon
Instructions:
Melt butter and sugar in a saucepan over medium heat. Bring to a boil, stirring constantly.
Add in remaining ingredients.
Press into a parchment lined 8"x8" baking pan.
Bake at 300 degrees F for 30 minutes.
The trick here is to let these sit at room temperature (lightly covered after cooling) for at least 12 hours or overnight because that is when they turn chewy! (These are at their best when they are chewy.)
Remove the entire pan with the parchment and cut into rectangular slices.
