Winter is upon us here in the Pacific Northwest but before Mother Nature brings consistent rain storms, ice and snow, I want to be sure to celebrate the last bits of fall with a few autumn-inspired recipes, perfect for November.
Here are a few I am planning to make this month:
Fall's Best Apple Sausage Pot Pie with Cheddar Biscuit Topping - this is seriously such a hit with my family that I have even made it for guests who lap up every crumb of the delicious cheddar topping and promptly request the recipe.
Chocolate Chip Cookie Dough Covered Carmel Apples from Sprinkle Bakes - if these adorable apples taste as good as they look, my waistline is in trouble!
Pumpkin Gnocci in Gorgonzola Sauce from Closet Cooking - the flavor combinations sound delicious and the recipe sounds attainable.
Chicken Mushroom Pot Pies from Mountain Mama Cooks - the Mountain Mama shares that this one pot meal can be in the oven in 20 minutes!
Apple Nachos from a Taste of Home - this would make the ultimate teen after school snack with fresh sliced apples swirling in caramel, peanuts, chocolate chips and sprinkles.
Crockpot Garlic Mashed Potatoes from The Pinning Mama - this would be a great solution for limited kitchen cooking space during the holidays that sound like an easy yet mouth-watering side dish with minimal effort.

Spiced Pumpkin and Oatmeal No Bake Cookies from Project Domestication - made with Dulce de Leche instead of peanut butter for allergy afflicted family members would make an even healthier after school snack.

Blessing Bags from Kids with a Vision - even though this isn't necessarily a recipe, I have wanted to make these blessing bags with the kids to have at the ready for the homeless we encounter in our area. Filled with snacks, deoderant, soap, wipes, tylenol samples and even a pair of wool socks - what a simple offering that could translate to a blessing for someone faced with the elements this winter.
