I have been making this recipe for years yet it is one that I forget about for several months but when I make it again, it always garners clean plates and rave reviews from my pickiest constiutents...yes, the teens.
I love the fact that this recipe packs in fresh fruits and vegetables in a refreshing melding of citrus flavors. I also consistently have these ingredients on hand and this comes together so quickly to ease in the crazy weeknight meal efforts.
This is one of those recipes that if you didn't try it for yourself, you may not be drawn to the "sound" of the combination of ingredients.
Carrot Apple Chopped Salad with Cranberries
Ingredients:
2 medium carrots
2 apples (I've used all varieties, whatever is on hand)
1 lemon, zested and juiced
1 orange, zested and juiced
2 -3 tablespoons brown sugar
1/2 cup dried cranberries
Instructions:
1. Peel apples and carrots. Chop carrots and apples using a Food Processor, or chop into small bite sized pieces.
2. Zest lemon and orange. Squeeze juice from lemon and orange. In a small bowl, mix juices, brown sugar and zests for dressing.
3. Mix apple and carrot mixture with cranberries then toss with dressing. Refrigerate 20 minutes, if you have the time. I've been known to serve this immediately, if pinched for time but it is definitely best chilled.
Makes 4 servings.
