Cream.
Who knew that this strange blend of ingredients would create the most magnificent soup?
Zuppa Toscana (Toscana Soup)
Ingredients:
2 3/4 cups chicken broth
1/4 cup heavy cream
2 cups kale, chopped
1 medium potato, peeled and cut into bite-sized chunks
1/2 pound Italian sausage, mild or spicy (I have used a package of Jimmy Dean Regular Sausage also)
1/4 teaspoon red pepper flakes
Optional: 1/4 teaspoon salt, if needed
Instructions:
1. Brown the sausage in a medium saucepan, breaking up into crumbles. Mix in the chicken broth and cream, potato and kale.
2. Add the red pepper flakes and salt. This is best if you let the soup simmer for approximately two hours, but I am most often in a pinch for time and enjoy this soup just as much after a quick 20 minute simmer.
This is great served with fresh vegetables, a crisp salad and a crusty loaf of bread.
